This old vineyard produce not more than 6 grapes per vine for a total yield of 20 Hl / Ha. Grapes are hand picked and selected; fermented in stainless steel tanks at temperatures kept below 25 °C with frequent pigeages. After 10 days of maceration Cirsium is racked in barrels of different ages where it does malolactic fermentation. It then ages for about one year in barrels and is bottled with no filtration. It rests a couple of years in bottle before market release |

I really love this wine, for its earthy, dried tobacco and wild red berries aromas. It is warm and deep. Please, serve this wines at not more than 16 °C ! 14°C is optimal |
