Winemaking: grapes are hand harvested and selected. Fermentation is conducted in stainless steel tank for about 10 days. Temperature is always kept below 25 °C. After malolactic fermentation the wine is racked in barrels (first and second passage) where it rests for about 1 year
Ageing: 1 year in barrels, 2 years in bottles

Commentary: the pedologic and climate conditions at Selvanova give rise to a unusual Cabernet Sauvignon with lots of earhty / underwood aromas. It's different.
