Vineyards: yielding 0.5 kg/vine, planted on steep terraces on extremely rocky calcaire soils, yielding 20 Hl/Ha
Winemaking: Grapes are hand picked and selected. Fermented by means of native yeasts in a oak cask for about 25 days, with pigeages and pumping overs. Malolactic in barrels; aged in barrels sur-lie with no rackings.
Ageing: 13 months in barrels, 16 months in bottle
Total Production: 3600 btls
Commentary: delicate and refined with lots of spices, dark and red wild fruits, leathery notes and tobacco hints. Velvety touch and long finish. An amazing achievement !
